The food has roots. The room has stories. Everyone has a seat.
Chef Nadia Haddad grew up between Beirut family lunches and Paris market mornings. Every kitchen she has loved had the same two things: a live flame and someone insisting you eat more.
After years in some very precise restaurant kitchens, she decided the best food was not always the most complicated. In 2019, she opened Saffron & Salt in Le Marais with a simple promise: great ingredients, fearless seasoning, and hospitality without the theatre.
Her favorite sound? A busy room, just after the first round of plates arrives.
Nadia HaddadThere was no grand plan to make Levantine food fashionable. Just a stubborn belief that the dishes we love most deserve a place in this city: smoky aubergine, fiercely lemony sauces, slow-cooked meat, and bread that never arrives in small quantities.
Our little dining room opened in 2019 and has been noisy in all the right ways ever since. We shop with the seasons, buy from people we know, and keep the grill warm.

If the market changes, so do we.
Better shared and never precious.
Come as you are. Stay as long as you like.
“We cook the way people actually eat: with their hands, with their friends, and with absolutely no shame about the last piece of bread.”— Nadia Haddad, chef & co-founder
